Cooking Instructions for Grilled Avocado Chicken Salad
- Prepare grill for indirect heat and preheat grill to medium-high heat (375°F-400°F).
- Pat the chicken dry with a paper towel, then season on both sides with salt or Mexican seasoning.
- Lightly oil your Oscarware® 16 x 12 Porcelain Coated Grill Topper.
- Place chicken on grill topper and then place topper on the preheated grill over indirect heat and grill for 6-8 minutes per side or until an internal thermometer reads 165°F.
- While chicken in grilling, pit and peel the avocado and dice it into cubes. Add it to a medium sized mixing bowl. Mince the green onion and cilantro and juice the lime and add them to the bowl. Note: If you decide to grill the avocados, cut them in half and remove the pit and sprinkle with sea salt. Place them on your grill topper with the cut side down. Grill them for about 3 minutes. After they cool, peel and chop into cubes.
- Remove grill topper with chicken from grill and place it on a heat resistant surface. Place chicken on plate and let them rest for 5 minutes. After chicken has cooled, cut it into half-inch cubes and add to bowl.
- Mix and mash the ingredients in the bowl together (do not add the salad greens yet) to combine. Taste and add more salt if needed.
- Serve chicken salad over salad greens.
- Remember to allow your grill topper to cool completely before washing. Your topper is dishwasher safe, which makes cleaning up easy.
