Grilled Buffalo Chicken and Cauliflower Dip

Ingredients

  • 2 cups of shredded chicken (roughly two breasts)
  • 1 1/2 cups of cauliflower florets
  • 8 oz of softened cream cheese
  • ¾ cup of ranch dressing
  • ¾ cup of blue cheese crumbled
  • 1 cup of Franks Red Hot hot sauce
  • 2 tablespoons of salt
  • 2 tablespoons of pepper
  • 2 tablespoons of smoked paprika

    Cooking Instructions for Grilled Buffalo Chicken and Cauliflower Dip

    1. Preheat the grill to medium-high heat.
    2. Pat dry your chicken with a paper towel and toss your cauliflower in olive oil. Generously season chicken and cauliflower with salt, pepper, and smoked paprika.
    3. Lightly oil your Oscarware® 16 x 12 Porcelain Coated Grill Topper and place chicken and cauliflower on greased grill topper.
    4. Grill for approximately 30-40 minutes, flipping chicken after 15 minutes, until cauliflower is tender and chicken is fully cooked (internal temperature of 165°F).
    5. While the chicken and cauliflower are grilling, preheat the oven to 350°F.
    6. Once the chicken and cauliflower are fully cooked, remove from the grill and allow to cool for 10 minutes. After cooling, shred the cooked chicken and chop the grilled cauliflower.
    7. In a large bowl, mix shredded chicken, chopped cauliflower, hot sauce, cream cheese, ranch dressing, and blue cheese until well combined.
    8. Transfer the mixture into a 1-quart baking dish and spread evenly.
    9. Bake in the oven for 20 minutes, until the top is golden.
    10. Allow the dip to cool and garnish with chopped green onions. Best served with chips, crackers, and veggies sticks.
