Ingredients
- 6-8 apples peeled and diced
- 1 ¾ cup sugar
- Pinch of cinnamon
- 2 cups buttermilk
- 4 eggs
- 3 ½ cups of all-purpose flour
- 2 tsp baking soda
- 2 tbsp vinegar
- 1 tbsp corn syrup
- 4 tbsp water
- ½ cup heavy whipping cream
- Canola oil
- 1/3 cup of chopped pecans (for garnish if desired)

Cooking Instructions for Grilled Candy Apple Pancakes
Grilled Apples
- Preheat grill to medium heat about 300-350°F.
- Mix apples with ¼ cup of sugar and a pinch of cinnamon.
- Oil Oscarware® Porcelain Griddle Topper with canola oil.
- Place apples on Griddle Topper, then once grill is preheated, place Griddle Topper on grill.
- Grill apples for 20 minutes. The sugar will caramelize so remember to stir every 5-7 minutes to avoid burning.
- Remove Griddle Topper with apples from grill. Allow to cool then place apples in a bowl and set aside.
Grilled Buttermilk Pancakes
- Preheat grill to medium-high heat (350-400°F).
- Wash and dry Griddle Topper, then re-oil it with canola oil.
- Whisk together ½ cup of sugar and the eggs. Add the flour and buttermilk and use a mixer to mix until clumps disappear. Batter will appear thick.
- In a small bowl, mix baking soda and vinegar. Add to pancake batter and mix to combine.
- Once your grill is preheated, place the griddle on the grill and close the lid for 1-2 minutes.
- Open the grill lid and using a 1 cup measuring cup, fill with batter and pour on one side of griddle then repeat and pour on other side of griddle.
- Close lid and grill for 3-4 minutes or until bubbles have popped.
- Open grill lid and turn each pancake. It should only take about 1-2 minutes to grill the other side.
- Remove pancakes from griddle, add another tbsp oil to each side of Griddle Topper, and repeat steps 11-15 until all pancakes are cooked and plated.
- Remove Griddle Topper from grill. Allow Griddle Topper to cool completely before washing. Your Griddle Topper is dishwasher safe. Read our use and care instructions available on our website.
Candy Caramel
- Mix 1 cup of sugar, water, and corn syrup in a medium sized pot on a stovetop. Use a wooden spoon to stir while bringing it to a boil. Keep stirring until sugar dissolves.
- Boil heavy whipping cream in another pot.
- Once sugar has dissolved, stop stirring and reduce heat to medium. Let it cook until it turns golden and make sure it doesn’t burn. Stir if necessary to keep it from burning.
- Once it’s golden, add the cream and stir with wooden spoon to combine. Cook for another minute then remove from heat. (Note: Caramel will harden and you might need to reheat it to melt it if you do no use it immediately)
- Spread apples over pancakes with a spoon. Drizzle pancakes with caramel. Add chopped pecans if desired. Serve with syrup.
