Grilled Herb Butter Turkey

Ingredients

  • 12 lb. Whole turkey completely thawed, if frozen
  • 12 oz. Butter softened, at room temperature
  • ¼ cup fresh parsley chopped
  • 3 tablespoons of fresh chives chopped
  • 2 large lemons
  • Olive oil (not extra virgin)
  • 2 garlic bulbs (press 6 cloves from one bulb)
  • 1 large yellow onion quartered
  • 2 bay leaves
  • 2 sprigs of fresh Rosemary
  • Sea Salt
  • Black Pepper
  • Cooking twine to truss turkey or tie legs

    There’s something truly magical about the aroma of juicy turkey sizzling on the grill, blending perfectly with the fragrant herbs and luscious butter. This Grilled Herb Butter Turkey recipe is a delightful twist on the classic roast turkey, giving it a tantalizing smoky flavor that will have everyone coming back for seconds.

    Cooking Instructions for our Grilled Herb Butter Turkey

    1. Prepare the grill for cooking with indirect heat and then preheat the grill to 350oF. If you want, you can place a drip pan underneath the grate to catch the drippings from the turkey to make your gravy or to add to your dressing.
    2. Combine the softened butter, chopped parsley, chopped chives, juice from one lemon, pressed garlic, ¾ teaspoon of sea salt, ¾ teaspoon of black pepper, and 1 tablespoon of olive oil and mix well. Set aside.     
    3. Remove the turkey’s neck and giblets and either discard or reserve for another use.
    4. Rinse out the body cavity with water.
    5. Stuff the cavity with 1 lemon halved, 1 onion halved, 1 garlic bulb halved, the sprigs of rosemary, and the bay leaves.
    6. Starting at the tail cavity, slowly slide your fingers underneath the skin to loosen it enough to stuff it with the herb butter. Be careful not to tear the skin. Repeat this step at the opposite end.
    7. Generously rub the butter under the skin with your hands so that it is evenly distributed. 
    8. Rub the outside of the turkey with the remaining butter then season the turkey with salt and pepper. Lightly coat the skin with olive oil to give it a nice golden-brown color.
    9. Lightly oil the XL Rib and Roast Rack and then place turkey with breast side up on the rack. You can either remove the wing tips or stretch them out and tuck them under the back. You can truss the turkey with cooking twine or just tie the legs to its tail.
    10. Place XL Rib and Roast Rack with turkey over the indirect heat section of grill.
    11. Grill the turkey for 2 ½ to 3 hours or until you get an internal temperature reading of 165oF (USDA Recommended) in the breast and 170-175oF in the thickest part of the thigh without touching the bone. Dark meat will take longer to cook than white meat. We recommend using an instant-read meat thermometer.
    12. Remove from grill and let turkey rest at least 30 minutes before carving. Do not cover with foil while resting as this will add moisture and cause the skin to get soggy instead of crispy. Enjoy the most delicious Grilled Herb Butter Turkey!
