Thanksgiving Turkey Ingredients

- 6 cloves of garlic
- 1 tbsp black peppercorn
- 1 orange sliced
- 1 apple cored and sliced
- 1 onion sliced
- 4 bay leaves
- 2 additional gallons of cold water

Instructions for Turkey Brining
- Ensure your turkey is fully thawed, rinsed in cold water, and free of giblets and the neck.
- Prepare the brine by combining all listed ingredients (except the 2 gallons of water) in a large saucepan. Stir constantly over medium heat until the sugar and salt dissolve.
- Bring the brine to a boil for 2 minutes, then remove from heat and allow it to cool completely.
- In a large pot or container, combine the cooled brine with 2 gallons of cold water. Submerge the turkey, ensuring it is fully covered.
- Cover the pot and refrigerate for 18 hours.
- After brining, rinse the turkey thoroughly with cold water, pat it dry, and refrigerate uncovered for an additional 6 hours to allow the skin to dry.
Instructions for the Smoke Grilled Turkey
- Preheat your grill to 300°F (we recommend using the Big Green Egg Ceramic Heat Deflector under the grill grate).
- Place the turkey on the Oscarware® 16″x12″ Porcelain Coated XL Roast & Rib Rack, which makes lifting and rotating the turkey effortless.
- Melt 2 sticks of butter and generously baste the turkey. No additional seasoning is needed—the brine infuses it with flavor!
- Once the grill is at 300°F, use the handles of the Oscarware® 16″x12″ Porcelain Coated XL Roast & Rib Rack to place the turkey onto the grill.
- After 2 hours, carefully rotate the rack 180 degrees for even cooking. Continue grilling for 1 more hour.
- Use a meat thermometer to ensure the internal temperature reaches 165°F in the thickest part of the breast and thigh before removing the turkey from the grill.
- Once removed, loosely tent the turkey for 30 minutes before carving. This ensures the juices redistribute, keeping the meat moist and tender.
